Mexican Fiesta- Tuesday's in the Kitchen

 This is Miss Two's favourite meal, when you ask her what she wants for dinner she throws her hands up in the air and yells Mexican. It always gets a little dance and lots of smiles. It's an easy dish and usually a meal made on our Friday nights. An end of week treat for the whole family and there are never leftovers.

Prep time: 15-20 min | Cooking Time: 15-20 min | Serves 4-6 people


For amazing salsa-
1 Spanish Onion very finely chopped
3 Tomatoes medium
Lime juice 1 tbsp
1 tbsp white wine vinegar
Salt to taste
1 Jalapeno finely chopped including seeds
1 small green capsicum finely diced

For the rest of the dish-
1 tin of Re fried beans 
250g-500g Lean Beef Mince (depending on how many you are serving)
1 Taco Seasoning Sachet
2 cups of grated Tasty cheese
Large tub of Sour Cream
Packet of Tortilla Wraps

how to make

  1. Preheat the oven to 160°C and take out a casserole dish to place tortillas in for final cooking.
  2. Finely dice Spanish onion, green capsicum + tomatoes and place in a dish along with lime juice, white wine vinegar + salt to taste and stir.
  3.  Set 1/2 a cup of salsa aside for your little people and then add the finely chopped Jalapeno chili including seeds to the last of the mixture in a separate bowl. This gives you a mild salsa and a hotter salsa for those that love some heat to their Mexican. Stir and taste, add more lime juice and salt to taste. Set aside salsa aside.
  4. Cook the re fried beans with 2 tsp of water on a medium heat for a few minutes to heat through. This should be a smooth mixture but not to runny.
  5. In a Fry pan fry off 250g-500g (depending on no. of people your serving) and add a taco seasoning sachet to the beef mixture and stir. Cook till the mince is brown and well cooked.
  6.  Add the re fried beans to beef mince in fry pan, give everything a good stir and cook for a few more minutes. Set aside off the heat.
  7. Open pack of Tortillas, separating tortillas gently lay one on a plate and add a layer of mince/bean mix. 
  8. Sprinkle a thin layer of grated cheese over the mince mixture, roll wrap up, turn it over onto the oven dish so it's resting on the join of the wrap. 
  9. Top with a generous amount of tasty cheese.
  10. Place in oven at 160 degrees for five minutes till the cheese is melted.
  11. Serve and top with sour cream and salsa.
