This is Miss Two's favourite meal, when you ask her what she wants for dinner she throws her hands up in the air and yells Mexican. It always gets a little dance and lots of smiles. It's an easy dish and usually a meal made on our Friday nights. An end of week treat for the whole family and there are never leftovers.
Prep time: 15-20 min | Cooking Time: 15-20 min | Serves 4-6 people
For amazing salsa-
1 Spanish Onion very finely chopped
3 Tomatoes medium
Lime juice 1 tbsp
1 tbsp white wine vinegar
Salt to taste
1 Jalapeno finely chopped including seeds
1 small green capsicum finely diced
For the rest of the dish-
1 tin of Re fried beans
250g-500g Lean Beef Mince (depending on how many you are serving)
1 Taco Seasoning Sachet
2 cups of grated Tasty cheese
Large tub of Sour Cream
Packet of Tortilla Wraps
